It's not a question of whether or not things are assigned manually, it's a question of where to bind the static assignments - in DHCP or on the servers themselves. Sure, if you set up a critical service and don't monitor it then you can run into problems but that is always true. I used to set static IP addresses for my printers and devices like that but now I just use DHCP with a reservation. DHCP: Workstations, VoIP Phones. For workstations that need a static IP, I prefer to use reservations.
